As well as making sawdust and beautiful things from wood, I love to cook and use my chopping board every day, so I have designed my perfect chopping board.
40cm x 24cm (16" x 9.5")
Solid hardwood - my ideal chopping board is made from a single piece of solid hardwood - Beech, Ash or Cherry - each with their own beautiful colour and grain pattern.
Hygienic - a bare wooden board with no finish is the most hygienic, far safer than plastic chopping boards. Any bacteria on your meat, fruit or vegetables is drawn into the pores of the wood where it dies quickly and within 5 minutes, almost no bacteria can be found. This compares with plastic boards where the bacteria can stay for a LONG time. All that is needed is to wash the board with water after use, maybe some washing up liquid to help get rid of any grease or fat and then allow the board to dry. Hygienically safe and simple to clean
No Glue - although they look stunning and I love fancy, glued up cheese boards, the glue lines slow the movement of bacteria and slows the rate they die off. My suggestions is to keep these boards for cooked foods such as bread, cake or cheese, especially where the display is important and use a single piece board for raw food
No Finish - I use a beeswax finish on my cheese boards but my ultimate board is unfinished, natural wood.
