Leaping hares are a symbol of overcoming limiting beliefs. The dynamism of the image is great for something static like this. Hares stop and gaze at the moon, many people offer reasons why. And hares are often also associated with Celtic goddesses, shape-shifting, and fertility. Perhaps its such a rarity to see a hare that we assume there is a special significance? They have become such ethereal beings in our world.
